PORTIONS 8 COOKING TIME 15-30 minutes
1 pinch of salt
120 g icing sugar
6 tbsp water
150 g flour
1 pack vanilla sugar
apricot jam (according to taste)
DIRECTIONS FOR SWISS ROLL
Separate eggs. Whisk egg whites with a pinch of salt until the mixture is stiff. Stir egg yolks, sugar and water until frothy. Gradually fold in flour and vanilla sugar, followed by egg white.
Evenly spread the mixture onto a baking tray and bake in a pre-heated oven at 180 °C/ 350 °F for approx. 10-15 minutes until the sponge has a nice golden colour.
Sprinkle a clean tea towel with plenty of sugar and put the sponge onto it.
Spread the sponge with jam and then carefully roll up with the aid of the tea towel.
Sprinkle the cake with icing sugar just before serving.
